A Few of My Favorite Fall Recipes

October is my favorite month. I love the cool mornings, the return to cozy sweatshirts and, of course, comfort food. I thought it'd be fun this month so share some of my favorite Fall recipes with you. Enjoy this little snapshot into my kitchen in October! I hope it inspires you to try something new and to enjoy this season.

Roasted Pumpkin Seeds

A couple years ago I tried roasting my own pumpkin seeds after our annual pumpkin carving night. They turned out so well that my 6 year old now starts asking for them as soon as October hits. If you’ve never tried roasting pumpkin seeds, I encourage you to go for it! Kate of Cookie+Kate has a neat trick for cleaning her seeds. Try it, and her recipe here!

Curry Cauliflower Salmon

In full transparency, I’ve never actually made this curry cauliflower salmon recipe with all the exact ingredients, but it’s a family favorite! I love that it’s a sheet pan dinner and everyone enjoys the awesome mix of flavors. The photo credit goes to Food Network, but come on, doesn’t that look amazing?!

Male Chauvinist Chili

While I will not give away my mom’s secret chili recipe, I did find one that comes close enough to recommend. It’s certainly not vegetarian, and I guess the name isn’t necessarily PC, but it is the only way I make (and eat) chili. October is usually when I make the first batch of chili for the cooler months and it makes everyone in the house cozy, full, and happy. I can’t vouch for this exact recipe, but again, it comes close to my mom’s, so my guess is it’s still pretty darn good!

Pizza Soup and 1-Hour Focaccia Bread

Another tried and true comfort meal is pizza soup. I like this recipe because it’s so versatile so it’s easy to adjust to lots of different dietary preferences. It’s also a great way to sneak in some extra veggies. I think the next time I make it, I’m going to have to also make this 1-hour rosemary focaccia bread to go with it! Mom hero status, achieved.

No matter what you eat during these cooler months, it’s a great opportunity to tune into your body. So many of us crave comfort food, but have we stopped to wonder why? I love eating with the seasons and enjoying the variety it brings to my diet. My challenge to you this month is to welcome the change in seasons by trying a new recipe or a new ingredient. Who knows, it just might become a new favorite!
